Bacon and kimchi fried rice

Bacon with spicy, tangy kimchi to make this easy campervan fried rice. Topped with a fried egg and some chilli sauce and you are good to go.

Ingredients

4 -6 rashers streaky smoked bacon, cut into 1cm wide strips
50g – 100g kimchi, roughly chopped
½ or 1 large carrot, coarsely grated
1 or 2 packets of cooked long-grain rice (Aldi Packet) 
½ tsp dried chilli flakes
1 tbsp soy sauce
bunch spring onions, thinly sliced
2 tbsp vegetable oil
2 – 4 free-range eggs
chilli sauce, to serve

Method


Cook the bacon in a large frying pan (you know how you like your bacon).
Stir in the kimchi and carrot and cook for 1 minute.
Add the rice and continue to cook, keep stirring regularly until the rice is hot.
Stir in the chilli flakes, soy sauce and most of the spring onions.

Divide the fried rice between two or four shallow bowls.

Quickly wipe the frying pan with kitchen paper, then heat the oil in the pan and fry the eggs until done and place on top of the rice.

Scatter over the remaining spring onions and serve with the chilli sauce.

Prepare: less than 5 mins
Cook: 10 to 30 mins
Serve: 2 – 4
